"Take Out" @ Home

You can totally do a "take out" meal at home!! I tend to do a lot of homemade Chinese instead of going out and getting it! This is a 2 for 1 one post.....2 different recipes to have your own "take out" without leaving the house :)
 
 
First up Baked Sweet & Sour Chicken
 
Ingredients
  • 3-4 boneless, skinless chicken breasts
  • Salt and pepper to taste
  • 1½ cup cornstarch
  • 3 eggs, beaten
  • ¼ cup canola oil
  • 1 cup granulated sugar
  • 4 tablespoons ketchup
  • ¼ cup white vinegar
  • ¼ cup apple cider vinegar
  • 1 tablespoon low sodium soy sauce
  • 1 teaspoon garlic salt
Instructions
    Preheat oven to 325 degrees. Cut chicken breasts into bite-sized pieces and season with salt and pepper. In separate bowls, place cornstarch and slightly beaten eggs. Dip chicken into cornstarch then coat in egg mixture. Heat canola oil in a large skillet over medium-high heat and cook chicken until browned. Place the chicken in a 9 x 13 greased baking dish. In a medium sized mixing bowl, combine sugar, ketchup, apple cider vinegar, white vinegar, soy sauce, and garlic salt. Pour over chicken and bake for 1 hour. Stir the chicken every 15 minutes so that it coated them in the sauce.
     
    Next, Homemade Egg Rolls
    These were soooooo good and simple to make!!
     
Ingredients:
12 egg roll wraps
  • 12-1 lb ground pork (or chicken or beef)

  • 2 teaspoons chopped fresh ginger
  • 2 garlic cloves, minced
  • 1 teaspoon salt
  • 1 teaspoon sugar
  • 14 cup soy sauce
  • 1 teaspoon sesame oil
  • 1 (16 ounce) bagshredded cabbage and carrot coleslaw mix (not quite the whole bag)
  • 4 green onions, sliced
  • 1 egg, beaten with
  • 1 teaspoon water
  • oil (for frying)

    Directions:
    Brown pork with ginger and garlic in pan; drain any grease.
    Mix salt, sugar, soy sauce and sesame oil. Add to pork and mix well.
    In large bowl combine cabbage mix and green onions.
    Pour hot meat over vegetables and stir well. Let cool slightly.
    Lay wrap in front of you so that it looks like a diamond.
    Place 3 tablespoons pork filling in center of egg roll wrapper.
    Fold bottom point up over filling and roll once.
    Fold in right and left points.
    Brush beaten egg on top point.
    Finish rolling.
    Set aside and repeat with remaining filling.
    Heat 2-3 inches oil in large frying pan to very hot (350ºF).
    Fry a few egg rolls in pan at a time, 2-3 minutes per side.
    Drain on paper towels.
