Breakfast Casserole

This recipe is so good! I was given this recipe from a friend, but I have adjusted some things. It's fairly simple and you could defiantly could get most of it ready the night before. I sometimes will get the meat/cheese mixture together the night before. You could also bake your potatoes the night before and then in the morning just stick them in the oven to crisp and warm back up.

Here's your ingredients: Potatoes, butter, meat, cheese, onion and milk
 
 First put your potatoes in your greased baking dish. Pour your melted butter over top and sprinkle with salt and pepper. Bake for about 30 minutes or until the potatoes are crispy.
 
Meanwhile, mix together your onion, cheese and meat...I used bacon this time.
 
Mix up your egg mixture, just eggs, milk and salt and pepper
 
When potatoes are to your likely, pull them out and start layering
 
 First put the meat/cheese mixture overtop....
 
 
 
Then pour the egg mixture over top of everything
Put back in the oven and bake for another 25-30 minutes or until your knife inserted in the middle comes out clean.
 
 

Serves: 6-8 small servings
 

Ingredients:
3 cups of frozen potatoes {cubed or shredded}
1/3 cup melted butter
1 cup diced ham, bacon or sausage
1- 1 1/2 cup shredded Cheddar Cheese
Optional: 1/4 cup of chopped onion, green pepper, mushrooms
5-6 eggs
1/2-3/4 cup of milk
salt and pepper
 
Directions:
 
Spray 9x13 with cooking spray and preheat oven to 425'. Make sure your frozen potatoes are thawed out and then pressed between some paper towels to get out all excess water. Put them into your baking dish and drizzle your melted butter over top and sprinkle a little salt and pepper. Bake for 25-35 minutes.
 
Meanwhile, combine your meat, cheese, onions, peppers, etc. and set aside. In a small bowl mix together your eggs, milk and a dash of salt and pepper.
 
After potatoes are done, pull them out of the oven and start to layer. Pour the meat/cheese mixture over top first and then pour your egg mixture over that.
 
Reduce your oven to 350' and put the mixture back in the oven for about 25-30 minutes or until a knife inserted in the center comes out clean. The thicker the casserole, the longer it will take in the oven.
 
After it's done, pull it out an top it with some cheddar cheese and let sit for about 10 minutes before serving. It lets everything settle and the cheese will melt on the top.
