Strawberry Baked Oatmeal

Well that time of year is coming around....Fresh EVERYTHING! Veggies and Fruit! I am such a sucker for roadside stands. I will stop at one or 2...a couple times a week! If not more!! Of course one of my favorite items.....FRESH STRAWBERRIES!! Can't get enough of them! So I thought to get everyone super excited for fresh strawberries....how about a recipe for strawberry baked oatmeal! Great thing about it is you could add ANY fresh fruit! Apples, peaches, blueberries or mangos!! Possibilities are endless!! Plus it is pretty simple to prepare and I like to get it ready the night before. So in the morning....just pop it in the oven!
 
Ingredients!
 
First thing, chop up your strawberries
 
Beat the egg up first
 
Then add all remaining ingredients, expect strawberries. Mix well
 
Fold in your strawberries 
 
YUUMMMM!!! Then stick it in your baking dish and through it in the oven.
 
About 15 minutes before it's done, I take it out an sprinkle the top with brown sugar. Then stick it back in the oven for the remainder of the time.
 
 Holy Yummy!
 
Scoop some out and in a bowl with some milk!
 
Maybe even a little extra sprinkle of sugar ;)
 
Ingredients:
 
1/2 cup milk
1/2 teaspoon salt
1 teaspoon baking powder
1/2 cup sugar
1 egg
1/4 cup butter, softened
1 teaspoon vanilla extract
2 tablespoons oil
1 3/4 cups quick-cooking oats
 
Instructions:
In a medium sized mixing bowl, beat egg. Add rest of ingredients except oats and mix thoroughly until well combined. Add oats and stir. Pour into a greased 8x8 baking dish. Bake at 350 for 35 minutes.
