Chicken Salad with Bacon, Lettece and Tomato

A old friend {and I don't in the way of she OLD...LOL...I just mean "old friend" as in friends since kindergarten! Hahaha} We get together for "Play Dates/ Mommy Dates" as often as our bust schedules allow us to. So when we do, we started making something yummy for lunch and then make a yummy dessert, while our boys play! Well we have been on a salad kick the last couple times we got together! An this one....well it might just blow all the others out of the water!!! SOOOO freakin good! Let's get started!!

Ingredients: Romaine Lettuce, Diced Tomatoes, Diced Avocado, Cubed Cooked Chicken, Bacon, Diced Celery, Minced Green Onion, Lemon Juice, Mayo, Worcestershire, salt, pepper and some fresh chopped parsley

First stir your chicken, bacon, celery and tomato together. Then you want to mix together the Mayo, Worcestershire, Parley, Lemon Juice, Green Onions, Salt and Pepper.

Then all you do is pour the dressing over top of the chicken mixture and stir together. {We also tossed the avocado in as well}

Throw it in the fridge for about a half hour to bring together all those amazing flavors!

Stir really good and place over some Romaine Lettuce leaves! It made it more like a taco ;)

SOOOO refreshing and flavorful!! Defiantly be making again and again! It would be an amazing summer salad, with all fresh ingredients!!!


Ingredients:

5 slices bacon

3 cups diced cooked chicken


1 cup chopped fresh tomato


2 stalks celery, thinly sliced


3/4 cup mayonnaise


2 tablespoons minced green onion


1 tablespoon chopped parsley


1 teaspoon lemon juice


1 dash Worcestershire sauce


salt and ground black pepper to taste


12 leaves romaine lettuce


1 large avocado, sliced

Instructions:
  1. Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain bacon slices on paper towels; crumble.
  2. Stir chicken, bacon, tomato, and celery together in a bowl.
  3. Whisk mayonnaise, parsley, green onions, lemon juice, Worcestershire sauce, salt, and black pepper together in a bowl until dressing is smooth. Pour dressing over chicken mixture; toss to coat. Refrigerate until chilled, at least 30 minutes.
  4. Stir chicken mixture and serve over romaine lettuce leaves; garnish with avocado slices.
