Creamy Fruit Salad

Who doesn't love fruit salad!? YUM! Here is a little twist to your standard fruit salad!
 
The ingredients for this Creamy Fruit Salad are super simple, but put them all together and this little salad is fabulous! It’s sweet and refreshing, without the added calories. Plus it has mini marshmallows in it, and who can say “no” to mini marshmallows?!
 
You will need: Mini Marshmallows, Mandarin Oranges, Pineapple, Grapes, Apples, Flake Coconut, Lemon Juice {just a small amount to toss with apples to prevent them from turning brown} and Greek Yogurt
 
Dice up your apples and toss with a little lemon juice
 
 Add the remaining fruits...
 

 Next add your greek yogurt  and toss
 
 Refrigerate @ least 4 hours, so all the flavors meld together!
 
Serves 4
Ingredients
  1. 1 (10-ounce) can pineapple chunks, drained
  2. 1 (11-ounce) can mandarin oranges, drained
  3. 1 medium apple, cored and chopped
  4. 1 tsp lemon juice
  5. 1 cup grapes, halved
  6. 1/2 cup Plain Greek Yogurt
  7. 1/2 cup sweetened, shredded coconut
  8. 1 cup mini marshmallows
Instructions
  1. Add apple to a large bowl and toss in lemon juice to keep from browning. Add the pineapple, mandarin oranges, grapes, coconut, and marshmallows and toss to combine. Stir in Greek yogurt, gently tossing to coat.
  2. Refrigerate for at least 4 hours prior to serving to allow the flavors to meld together. Serve chilled.
Notes:
After a day or so of sitting in the fridge, liquid from the fruit may pool at the bottom. If eating the leftovers, I like to gently pour some of this off before eating.
