Alice Springs Chicken

 After I had my son, friends and family brought us meals for about 2 1/2 weeks, so we didn't have to cook after bringing home a new born. It was sooooo helpful and thoughtful of each and every one of them. One of my really good friends made us this Alice Springs Chicken {which is a signature favorite at The Outback Steakhouse}. She had warned me it was amazing! Well she was right! After that day I have made it a bunch of times and it's a chicken meal that my husband really likes. YAY! {You know since he's not a huge fan of chicken...weirdo.....Hahahahaha......Love you dear! ;) }
 
First you want to marinate your chicken over night in some honey mustard!

Couple Notes before we move on: You can make your own honey mustard sauce {which I did and will have the recipe below} or you can use store bought bottle of honey mustard. Both work great! Also, I already had bacon fried up when I made this, but the recipe below calls for frying your bacon up and keeping the grease to then fry your chicken up before putting it in the oven. Since I already had mine fried up, I just threw my chicken in the pan and fried it. Frying it in the bacon grease will bring out a better flavor for sure!

Pan fry your chicken until lightly brown on each side.....

Transfer to a baking dish, use remaining honey mustard sauce and pour over top of chicken....

Next, layer the bacon, mushrooms and cheddar cheese on top of each chicken breast and through them bad boys in the oven.....

Recipe: 

4 boneless skinless chicken breasts, pounded to 1/2 inch thickness 
8 bacon slices
1/4 cup regular mustard
1/3 cup honey
2 Tbsp. Mayonnaise
2 teaspoons dried onion flakes
1 small can of mushrooms or 1 cup of fresh mushrooms
2 cup shredded Cheddar cheese
 
To make the Honey Mustard:  In a small bowl, mix the mustard, honey, mayonnaise and dried onion flakes.  
 
Put chicken breast in a container and pour honey mustard over top, covering all sides, and marinate for at least and hour or over night.
 
Cook bacon in a large skillet until crisp.  Remove bacon and set aside.  ***Do not discard grease.***
Saute chicken in the bacon grease for 3 to 5 minutes per side, or until browned.  Place chicken in a 9" × 13" casserole dish or pan.
Pour any remaining honey mustard over chicken breasts. Layer the bacon, mushrooms and cheddar cheese over each breast.
Bake in a 350° oven for 30 minutes, or until cheese is melted and chicken is done.
