BBQ Meatloaf Mini's

Happy Thursday! Yay, it's almost the weekend!!!!!! I know some of you will be enjoying our yearly Fair in New Holland this week and will be filling up on all that yummy fair food.....but I figured I'd still post a yummy hearty recipe. Maybe save it for Sunday when you are at home being lazy and what a nice warm, hearty meal!

These are soooooo good! I loved the idea of putting them in a cupcake pan, so they were nice portion sizes! Plus the kids could help make them!

Ingredients are simple...1lb of ground beef, shredded cheddar {have you notice almost every recipe I use CHEESE ;) }, your favorite BBQ Sauce and a box of Stove Top Stuffing!
 
First mix together your stove top, water and BBQ sauce....
 
Add beef and mix through mix hands.....I of course added some cheese also ;)
 
Spray your muffin pan and fill each one to the top.....
 
Bake for 18-20, take them out and top with your remaining cheese and stick them back in till cheese is melted!
 
 
 

TOTAL TIME: Prep/Total Time: 30 min.
MAKES: 6 servings        
 
Ingredients
  •  1 package (6 ounces) stuffing mix
  • 1 cup water
  •  2 tablespoons hickory smoke-flavored barbecue sauce
  • 1 pound ground beef
  • 1 cup (4 ounces) shredded cheddar cheese

Directions

  1. Preheat oven to 375°. In a large bowl, combine stuffing mix, water and 2 tablespoons barbecue sauce. Add beef; mix lightly but thoroughly. Place 1/3 cup mixture into each of 12 ungreased muffin cups, pressing lightly.
  2. Bake, uncovered, 18-22 minutes or until a thermometer reads 160°. Sprinkle tops with cheese; bake 2-4 minutes longer or until cheese is melted. If desired, serve with additional barbecue sauce. Yield: 6 servings.
