Bang, Bang Shrimp

Seriously these are the best shrimp you will ever eat in your life time! Hahahaha! I'm not really exaggerating either! LOL! They are famous at The Bonefish Grill, I have had them at Dawson's. I have tired them a couple different ways now, but no matter how I make them....we can't get enough!!
 
Start out by making your sauce....Mix together mayo, hot sauce and sweet chili sauce. Put in the fridge till ready to use.
 
Toss your shrimp with some salt, pepper and garlic powder
 
 Set up your dipping line.....first dip in cornstarch, egg and then back in cornstarch
 
 
 Then add them to your pan with heated oil in and fry them up
 
 
 
 
 
 After they are all fried, put them in a bowl and pour your sauce you made down over top and toss to coat.
This was a new step I tired....put them on a baking sheet and stick in the oven for 5-10 minutes. Or until heated
 
Top with some chopped green onion!!!
 
 

INGREDIENTS

  • 1 pound shrimp
  • 1/2 cup mayo, I recommend Hellman’s
  • 1/4 cup Thai Sweet Chili Sauce
  • 4-8 drops Sriracha Hot Sauce
  • 1/8 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1 cup corn starch
  • 2 eggs
  • 6 tablespoons canola or vegetable oil
  • 1/2 of a green onion, diced and lettuce for garnish, if desired
 

DIRECTIONS

  1. In a large bowl, toss the shrimp with salt, black pepper, and garlic powder.
  2. Place corn starch in a shallow dish like a cake pan.
  3. In another cake pan, lightly whisk two eggs together to create an egg wash.
  4. Dip each piece of shrimp in corn starch to coat, then dip in the egg wash to coat. {An I dipped them back in cornstarch again}
  5. When all the shrimp have been coated in corn starch and dipped in egg, heat 6-8 tablespoons of oil in a large skillet on high heat. When the oil is nice and hot, CAREFULLY add the shrimp to the pan. You may need to cook the shrimp in two batches so that you don’t overcrowd the pan.
  6. The shrimp cook fast! When the bottoms of the shrimp are crispy, flip the shrimp so that the other side can cook. This should only take about 30 seconds-1 minute per side if the oil is nice and hot.
  7. Remove the cooked shrimp to a paper towel lined plate.
  8. In a small bowl, whisk together the Thai Sweet Chili Sauce, Sriracha Sauce and Mayo. When the mixture is smooth, carefully toss the shrimp in it. You may not need all of the sauce, it just depends on how “saucy” you want the shrimp.
  9. To present it, place one large leaf of iceberg lettuce on a plate. Place the shrimp on top, then sprinkle chopped green onion on top.
Notes: You can defiantly heat them up after you pour the sauce over them in the oven. Just to heat thoroughly. I preheated the oven @ 275' and then put them in for about 10 minutes or so. :)
