Homemade Chicken Corn Noodle Soup

You can literally throw anything in a pot with some broth and call it soup! LOL! There's not to much to it and it can be super simple ingredients. This recipe was one of those days.....picked a few things out and threw them in a pot!
 
 
First I started with a couple chicken breasts I had in the freezer and some diced onions. Cook it up until your chicken is done. You could really se any kind of chicken, legs, thighs, breasts and entire chicken works the best. You will get all those juicy flavors. Another great idea {that would still be quick} grab one of those awesome rotisserie chickens at the grocery store and shred that up!! Those chickens are soooo good! You can also add seasonings as well, I only added salt & pepper this time. Mainly cuz this was a quick meal!
 
Pull out your chicken and let it cool a little, so it's easier to handle. An then just shred and or shop up your chicken. Make sure you keep the broth you just cooked up the chicken in!!
 
Now throw all your chicken back in the broth along with some corn and celery. I also will add some Chicken Bouillon cubes. Gives it a little more flavor {specially since I was only cooking up a couple little chicken breast.
 
 
Stir everything together and bring to a boil
 
Then add you egg noodles
 
I like to bring it back to a boil, making sure your noodles are nice and soft. Then I will let it simmer on low for an hour or so. Just to really bring all those flavors out and together.
 
Right before your about to serve I like to throw in some hard boiled eggs, chopped up!
 
 
YUM! Simple and all done in one pot! That means less dishes ;)
