Hawaiian Macoroni Salad

I have made macaroni salad a couple times with a couple different recipes....but it's just never the same as when you buy it from the store!! I guess I must be pretty picky when it comes to macaroni salad....plus it's a lot of work chopping everything up ;) This recipe is probably the closest I have found to make at home and taste pretty close to store bought!
Let's Get Started!
 
First thing I did was chop up all my goodies! Green Onion tops, Carrots and Celery
 
Next ingredient's needed: Milk, Mayo, Brown Sugar and Salt/Pepper
 
Mix everything together
 
Cook your macaroni noodles according to package, drain and put back in pot and add apple cider vinegar until absorbed. Then cool for 10 minutes 
 
After it's cooled put in a container and add the milk mixture to it and mix well
 
Then mix in your carrots/celery/onions and stir.
 
Then add in the remaining mayo and milk....I also added a squirt of mustard ;)
 
Stick in the fridge for at least a couple hours or until the dressing becomes a little thicker.
I pulled it out and tasted it and then added some extra things according to taste buds :)
 
 
Ingredients:

  • 1 lb elbow macaroni
  • 1/2 cup apple cider vinegar
  • 2 cups whole or 2% milk, divided
  • 2 cups mayonnaise, ideally Best Foods' or Hellmann's, divided
  • 1 Tbsp brown sugar
  • 4 green onions, thinly sliced
  • 1 large carrot, peeled & grated
  • 1 celery stalk, minced
  • Salt & pepper

    Instructions
    1. Bring 4 quarts of water to a boil. Add 1 Tbsp salt and the macaroni; cook until VERY soft, about 15 minutes. Drain and return to pot; add the cider vinegar and toss until absorbed. Let cool for 10 minutes.
    2. Meanwhile, whisk together 1 1/2 cups of the milk, 1 cup of the mayonnaise, the brown sugar, 1/2 tsp of salt and 2 tsp pepper.
    3. Once the cooked pasta has cooled for 10 minutes, whisk in the dressing. Let cool completely.
    4. Add the remaining 1/2 cup milk and 1 cup of mayonnaise, along with the scallions, carrot and celery. Stir to combine, then season to taste with salt & pepper. Chill for at least one hour before serving.
