Fresh Strawberry Syrup

Oh my, I can't even hardly wait for fresh strawberries! Well pretty much fresh anything from a roadside stand!!!! YUM! This syrup is pretty much the easiest and best tasting thing you'll ever have!!! I mean seriously it's only 4 ingredients!!! An you can pretty much use it on top of ANYTHING! Ice Cream, Cheese Cakes {which will be the next recipe...stay tuned}, Waffles, Pancakes...I mean the list could go on and on!! So let's get started!
 
First cut up your strawberries....I quartered mine. Then through then in your sauce pan with sugar, lemon juice and vanilla
 
Yea that's pretty much it! Bring it to a boil and then lower the heat to a gentle simmer.
 
The strawberries will soften and it will slowly start to thicken up. Simmer for about 15-20 minutes, stir occasionally
 
YUMMMMM!!! Store in an air tight container in the fridge!
 
I made mini no bake cheese cakes and poured it over top!!! WOW!!!
 
Ingredients:
  • 3 cups strawberries, diced
  • 1 cup granulated sugar
  • 2 tablespoons lemon juice
  • 1/2 teaspoon vanilla
 
Instructions:
  1. Combine strawberries, sugar, lemon juice and vanilla in a medium saucepan and bring to a boil. Lower heat to a gentle simmer until the strawberries are soft and the syrup is thickened and reduced by 1/3 to 1/2 in volume, approximately 15 minutes, stirring occasionally.
  2. Syrup will thicken upon standing so simply whisk in more water to reached desired consistency if needed.
